
Then try these bad boys out. If you love peanut butter and want to go into a diabetic coma of goodness, then these are for you...these cannot be anymore fattening or worse for you then they already are. They are to die for!!!
Peanut Butter Sandwich Cookies
1 cup shortening (told you they aren't good for you)
1 cup creamy peanut butter
1 cup sugar
1 cup packed brown sugar
3 eggs
1 tsp. vanilla extract
3 cups all-purpose flour
2 tsp. baking soda
1/4 tsp. salt
Filling:
1/2 cup creamy peanut butter
3 cups icing sugar
1 tsp. vanilla extract
5 to 6 Tbsp. milk
1) In a large bowl, cream the shortening, peanut butter and sugars. add eggs, one at a time beating well after each addition. Add vanilla. Combine the flour, baking soda and salt in another bowl then add to creamed mixture and mix well.
2) Shape into 1 inch ball (using a cookie scoop works well for this part) and place 2 inches apart on ungreased baking sheets. Flatten balls with a fork, I went horizontal then vertical to make a grid pattern on top. Bake at 375 degrees for 7-8 minutes or until golden . Remove to wire racks to cool.
3) For filling, in a large bowl, beat the peanut butter, icing sugar, vanilla and enough milk to achieve a good spreading consistency. I used a piping bag to put the icing on one cookie and then smushed another one on, then you dont' have to spread it which sometimes breaks the cookie.
*You could also use your own pb cookie recipie instead of this one, if you think the one you've got is any healthier for you.
Yield: 2 dozen sandwich cookies.
